Mac OS X 10.6 "Snow Leopard"
Well, another year, and another installment to the Mac OS X lineup. This time, Snow Leopard is the lock, and the x86 machine of your choice will be the key to unlocking it. In recent (and not so recent) news, EFI-X is on the way to releasing a USB dongle that will allow you to boot unmodified Apple DVDs on standard x86 hardware. Much luck to them!
